Recipe: Chunky Lentil Soup
It may not look like much, and I actually only tried lentil soup for the first time last year, after dismissing it is a boring, tasteless dish in the past. But lucky I did decide to try it and trying it made me want to create my own version of it. Very easy dish to make, and perfect for wintery days.

Cooking time: 45 mins (plus 10 minutes preparation)
Serves: 3-4 people
1 small onion, finely chopped
1 teaspoon crushed garlic
1 teaspoon crushed ginger
1/2 teaspoon paprika (or to taste)
1/2 can tomatoes
2 cups vegetable stock
1 cup lentils (soaked prior)
1/4 cup coconut cream
Salt and pepper, to taste
1) Fry up the onion, garlic, ginger and paprika in a pot
2) Add tomatoes, 1 cup stock, soaked lentils, coconut cream, salt and pepper. Simmer for 20-30 minutes, until lentils seem to soften
3) Remove from heat, put in food processor until smooth.
4) Return to heat, with rest of the stock. Simmer for 5-10 minutes.
