Recipe | Rocky Road Brownies

How can anyone resist a good brownie? Chocolatey, moist (apologies if that word makes you squirm) deliciousness. As the weather gets cooler, my craving for anything chocolate grows and last week all I wanted was a fresh, warm batch of brownies. I decided to mix up my regular brownie recipe and make it extra naughty by creating a rocky road version! This recipe yields about 30 small brownies so feel free to halve the recipe if that's too many brownies (as if that's a thing!)

300 grams chocolate
300 grams butter, softened
4 eggs
2/3 cup cocoa
2 1/2 cups sugar
1 1/2 flour
200 grams granulated nuts
1 cup dessicated coconut
150 grams marshmallows, diced

1. Over low heat, melt together the butter and chocolate
2. Lightly beat the eggs and once the chocolate mixture has cooled slightly, mix together with the eggs
3. Fold in the remaining ingredients
4. Bake for 45 minutes at 180 degrees Celcius
