Honey Roasted Carrots | Recipe

Sometimes Masterchef makes me crave specific things, sometimes things I haven’t even tasted before but they make it look so good it has my mouth watering and wishing we lived in a Willy Wonka universe so I could reach into the TV and try their creations. It also inspires meals and although this recipe is not something I saw on Masterchef the use of Dutch Carrots was certainly inspired by the cooking show. As was the desire to keep the flavours simple. This would be a great side dish or as part of a tapas meal. And can be served either warm or cold.

8 Dutch Carrots
1 tablespoon honey
1 tablespoon olive oil
Salt and pepper for seasoning

1. Boil the carrots for 5 minutes
2. Microwave the honey for 30 seconds so it’s easier to work with
3. Mix the honey and olive oil together and coat the carrots with this
4. Bake the carrots for 20 minutes at 180 degrees Celsius
5. Season with salt and pepper
