Almond Crescent Cookies | Recipe

How crappy is this grey, cold, wet start to Spring? We got teased with a couple of days of warmth and then bam! Cold, rain, bring out the coats you put away because the wintery weather hasn't quiet left us yet. So over the cold weekend, I decided to indulge in the weater and bake a batch of almond crescent cookies. Sure these cookies can be enjoyed in any weather, but the cold complements these warm buttery cookies so well! Its also really quick to whip up if you are feeling something XX

Ingredients
250 grams butter, softened
1 cup slivered almonds
2/3 cup caster sugar
2 teaspoons almond extract
2 1/2 cups plain flour
1/4 icing sugar

Directions
1. Mix the butter and caster sugar until light and creamy
2. Mix in the almond extract
3. Sift in the flour then fold to combine
4. Roughly chop up the almonds then fold into the mixture
5. Grab a teaspoon size of the mixture then roll into a ball, then in a cylinder and then shape it like a C. Repeat until all the mixture is gone.
6. Bake for 15-20 minutes at 190 degrees Celsius
7. Allow to cool and then sift icing sugar on top before serving

Makes about 22 cookies
