Brigadeiros (Brazilian Chocolate Caramel Balls) | Recipe

There used to be a time when staying home on a Saturday night was the last thing I wanted to do, it was the best night to socialise with friends. And you always felt a little lame staying in. But now, having the occasional Saturday night free feels like an indulgence. Get to get in my PJs early and binge on Netflix. And last Saturday I did exactly that.  But after episode 1027 of How I Met Your Mother I felt a little fidgety and wanted to make something. I went over to Reddit's cooking challenge theme for inspiration, this week's theme was Brazillian. After some google research I decided I would make Brigadeiros.

This four ingredient, 2 step, no bake recipe is so so easy yet yields a rich, yummy mini dessert. Plus they are great little lunchbox treats or perfect for a picnic (I packed some on my trip to the Blue Mountains the next day).

Ingredients
375 grams condensed milk (1 can)
1 tablespoon butter
3 tablespoons cocoa powder
3 cups shredded coconut

Directions
1. Over medium to low heat place all ingredients in a saucepan stirring constantly for 10 minutes then remove from heat
2. Once completely cool, roll into little balls and then roll in coconut

Makes: 16 balls
